Marinated farm chicken with Wok Mix


Ingredients for 4 persons:

500g Wok Mix
2 double chicken breasts (without skin)
2 tablespoons of olive oil
1 teaspoon of shredded ginger
Juice of 1/2 lemon
5 tablespoons of Soya sauce
1/2 chilli pepper, finely chopped
100 ml of chicken stock
4 spring-onions, cut in fine slices
Parsley
2 tablespoons of sesame-oil

Preparation


Cut the chicken into fine slices. Mix together the olive oil, shredded ginger and lemon juice. Place the sliced chicken in a shallow dish and pour the marinade over  Cover it and leave to marinate  for 15 minutes. Fry the marinated chicken in a well-preheated wok pan for half a minute, constantly stirring. Put the meat aside on a warm plate. Pour the sesame oil in the same pan, add the wok mix , chilli pepper, and Soya sauce and stir fry until the liquid has almost fully evaporated.

Mix the chicken with the vegetables, pour the chicken stock over it and let this simmer for 1 minute. Sprinkle the spring onions over at the last moment and mix in. 

Serve on a  big, deep plate, pour sauce over and garnish with parsley.
