Creamy Calcutta soup

Ingredients

  • 450g of Ardo pre-fried onion slivers,
  • 500cl of chicken stock,
  • 65cl of liquid crème fraîche,
  • 50g of desiccated coconut,
  • 30gof turmeric,
  • 5g of Ardo chopped garlic,
  • salt and pepper

Preparation

  1. Heat the chicken stock. When boiling, add the pre-fried onion slivers, coconut and chopped garlic. Bring to the boil. Lower the heat, add the crème fraîche, salt, pepper and turmeric. Make sure the soup does not boil.
  2. Mix it with an electric blender for a perfectly smooth result (strain through a small strainer if necessary).
  3. Season to taste.
  4. Decorate the soup with a rosette of unsweetened whipped cream, strands of saffron and a sprig of chervil.
