Quinoa breakfast with vanilla and exotic fruit

Ingredients

  • 1kg Ardo Exotic fruit mix with passion fruit sauce
  • 700g Ardo Quinoa
  • 1L Soya milk
  • 100g Sugar
  • 1 Vanilla pod
  • 5 Egg yolks
  • 60g Cornflour
  • Fresh coconut for finishing

Allergens

Preparation

  1. Bring the soya milk to the boil together with the quinoa, vanilla pod and sugar. Allow to boil for a while.
  2. Mix the egg yolks with the cornflour then combine them with the warm quinoa.
  3. Let it simmer for a while until it is nicely bound.
  4. Cool and serve with the thawed exotic fruit mix.
  5. Top off with a little fresh coconut if required.
