Ingredients
- 600g Ardo Red Onion
- 1tsp Ardo diced garlic
- 1tsp Ardo thyme
- 1 bottle (Belgian) blond beer
- 1.5L beef bouillon
- 125g sliced goat cheese
- A few slices of baguette
- Liquid honey
- Salt & pepper

Preparation
- Sauté the onion and garlic together in a knob of butter on low heat.
- Pour the beer over the sautéed onion and allow it to cook dry.
- Then add the beef bouillon, bring it to a boil, add the thyme and let the soup simmer gently until the onion is tender.
- Season with salt and pepper.
- Cover several slices of baguette with sliced goat cheese, sprinkle with honey and place them under the grill until the cheese is golden brown.
- Serve immediately.
